PUTNAM COUNTY, W.Va. (WCHS/WVAH) — This week’s Foodie Friday features pizza. We traveled to Putnam County to meet up with the owners of Belknap Dough Company.
Jimmy and Amber Belknap opened their pizza food truck in October 2017 and went full-time this past August.
The Belknaps said they don’t know how they decided on pizza, but they know it’s working for them.
"We'll set up in the rain sometimes, and we'll have people waiting in the rain for pizza or we'll run it out to them,” said Jimmy Belknap, co-owner of Belknap Dough Company. “If it wasn't for the community and all the support behind us, it wouldn't be possible."
For those who are wondering how to make the perfect pizza, Belknap said it’s about the dough and fresh ingredients.
"We like to try to keep all the gases in the dough. It's what gives you your rise and your fluffy crust,” said Belknap.
The pizzas are cooked inside a wood-fired brick oven. It's 4,000 pounds of concrete and insulation and designed for the Belknap’s truck.
"It's cooking right at around 850 degrees. Everything cooks right on the fire brick and then we take it and let it rise about 90 seconds. We'll turn it a couple times,” said Belknap.
The Belknaps are hoping to one day have a brick and mortar location, but for now, keep an eye out in your community because they just might be rolling into town.
