Zucchini Bread From John Raby BONUS RECIPE
Mix oil, eggs and sugar in medium-sized bowl. Add 1 cup flour, salt, baking soda and baking powder. Mix well. Add grated zucchini and 2 1/4 cups flour. Beat well. Add vanilla, chocolate chips and coconut. Stir to blend. Bake at 350 degrees Fahrenheit for 1 hour in 2 greased loaf pans.
