Chicken Pot Pie
This is an all in one recipe Lee Ann Miller picked up from one of her favorite restaurants.
July 1, 2013

1 package of ready to use refrigerated unbaked pie crust (room temp).
Line 9-inch pie plate with one crust. Set aside.

Combine the following ingredients in a large bowl:

1 can condensed cream of potato soup
1 can condensed cream of chicken soup
1/2 cup chicken broth
1/4 teaspoon pepper
1/2 teaspoon salt
Dash of cayenne (optional)

Whisk together until incorporated.

Add to the above mixture:
2 1/2 c. cooked chicken, cubed (breast preferred)
1-16 oz. bag of frozen mix veggies- semi-thawed
1 can sliced water chestnuts

Mix together and pour into prepared unbaked pie crust.
Dot mixture with 2 Tablespoons cold butter.
Top with remaining 2nd pie crust and crimp edge together- cut 5 or 6 slits in top crust.

Bake pie at 375 for 50-60 minutes. Let cool for 10 minutes prior to serving.
