Emeril Lagasse Sinful Apple Pie

Pamela Egan, was a finalist of Emeril Lagasse's 2004 "Pie of Emeril's Eye" recipe contest on Good Morning America.

Be sure to try all of the finalists pies: Guy Pie, Pumpkin Streusel Pie, Sinful Apple Pie, Four Berry Pie and Maple Pecan Sweet Potato Pie.

Sinful Apple Pie Ingredients
For 10-inch crust
  • 1 cup of butter (softened)
  • 2 2/3 cup of flour
  • 1 teaspoon of salt
  • 6 to 8 tablespoons of cold water

    Crumb topping
  • 1 cup flour
  • 1/2 cup butter (softened)
  • 1/2 cup brown sugar (packed)
  • 1/4 teaspoon nutmeg or cinnamon (optional, both if desired)

    For the Filling
  • 1/2 cup of sugar
  • 1/2 cup brown sugar (packed)
  • 1/4 cup flour
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • Dash of salt
  • 4 medium gala apples
  • 2 Empire or Cortland apples

  • Directions

    Directions for the Crust: In a large bowl mix flour, salt and butter, stir with a fork. Add water, a couple of tablespoons at a time until the dough comes together. Try to handle dough as little as possible with hands (use wax paper). Roll to desired thickness. You may use the leftover dough to make decorative shapes for the top, if desired (use egg wash if you decide to do this). Place dough in pie dish, fold edges up, pinch with your fingers to form ripples. You want the pie shell to be deep.

    Directions for the Crumb Topping: Mix ingredients together with a fork until crumbly (not fine), put over top of pie before baking. Cover last 10 minutes of baking, if needed, so it does not burn.

    Directions for the Whole Pie: Preheat oven to 425°F. Mix dry ingredients in a large bowl, add apple mix. Once well coated, put in pie shell. Top with crumb topping. Cover edge of pie crust with a strip of aluminum foil. Cook 45-50 minutes. Pie needs to cook completely to set or may become runny.
