When the heat outside makes you and your friends feel like you are south of the border, you might as well act and eat like you are! Emeril Lagasse has the recipes for a fiesta on Good Morning America.
Ingredients
1/2 cup chopped red or yellow onions
1 teaspoon minced garlic
1/4 cup packed, fresh cilantro leaves
1 to 2 jalapeno or Serrano peppers, stemmed, seeded and minced
3/4 teaspoon salt
2 tablespoons fresh lime juice, or more to taste
1 1/2 pounds ripe red on the vine tomatoes, cored and coarsely chopped
Directions
Combine all the ingredients in a food processor and pulse about 12 times. The mixture should be slightly chunky. Transfer to a bowl, cover and set aside until ready to use. Can be stored in an airtight container for several days.
Makes 3 cups
