Emeril Lagasse Pumpkin Streusel Pie

Kristina Cobb, was a finalist of Emeril Lagasse's 2004 "Pie of Emeril's Eye" recipe contest on Good Morning America.

Be sure to try all of the finalists pies: Guy Pie, Pumpkin Streusel Pie, Sinful Apple Pie, Four Berry Pie and Maple Pecan Sweet Potato Pie.

Pumpkin Streusel Pie Ingredients
For the Pie filling
  • 2 eggs
  • 1 15-ounce can pumpkin
  • 1 14-ounce can sweetened condensed milk
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt

    For the Streusel
  • 1/3 cup of chopped pecans
  • 3 tablespoons melted butter
  • 1/4 cup firm packed brown sugar

  • Pre-made graham cracker crust (or store bought)
  • Pie dough (make your own or store bought)

  • Directions

    Make the Filling
    Beat eggs until light and fluffy then add milk, pumpkin and all spices. Mix well and set aside.

    Make the Streusel
    Melt butter and add to pecans and brown sugar. Mix until well combined.

    Use a 9-inch pie plate. Place streusel over the graham cracker pie crust and pour the filling over the streusel. Bake for 20 minutes at 425 degrees Fahrenheit.

    Remove pie. Cut fun shapes out of your pie dough and place them on top of your pie.

    Reduce heat to 350 degrees F. and bake for an additional 35-40 minutes.

    Top with whipped cream of your choice.
