Emeril Lagasse Maple Pecan Sweet Potato Pie

Sandra Kaufmann, was a finalist of Emeril Lagasse's 2004 "Pie of Emeril's Eye" recipe contest on Good Morning America.

Be sure to try all of the finalists pies: Guy Pie, Pumpkin Streusel Pie, Sinful Apple Pie, Four Berry Pie and Maple Pecan Sweet Potato Pie.

Maple Pecan Sweet Potato Pie Ingredients
  • 1 pastry pie crust (your favorite recipe or store bought)
  • 3 large eggs
  • 1 cube of sugar
  • 1 teaspoon cinnamon
  • 1 cup of peeled, cooked and mashed sweet potato (about 1 medium to large potato)
  • One 5-ounce can evaporated milk
  • 1/2 cup of maple syrup
  • 1/2 teaspoon of vanilla
  • 1/4 cup of butter or margarine (melted, 4 tablespoons)
  • 1 1/2 cup of coarsely chopped pecans
  • 1 small container whipped topping

  • Directions

    Preheat oven to 350°F.

    Line a 9 1/2-inch glass pie plate with pie crust. Flute edges and cover with aluminum foil.

    In a large bowl, beat eggs until well blended with wire whisk. Add all remaining ingredients, except pecans. Mix well with a wire whisk. Add pecans and stir until blended. Pour into pie crust.

    Bake for one hour or until knife inserted in center comes out clean. Remove from oven and let cool.

    Serve with a dollop of whipped topping and drizzle with maple syrup.
