Joan Lunden Joan Lunden's Brown Rice and Asparagus Stir-Fry

Former Good Morning America co-host Joan Lunden is one of the most well-known working mothers in America. Her top priority has been to make sure that her children grow up happy and healthy, and her new book, 'Growing Up Healthy: A Complete Guide to Childhood Nutrition, Birth Through Adolescence', co-written with Dr. Myron Winick, gives readers strategies and tips to do just that. It features recipes that she says will boost a child's brainpower, help them to grow strong, and protect them from disease.

Her recipe for stir-fry is great tasting and healthy too!

Ingredients
  • 2 teaspoons canola oil
  • 2 cups asparagus trimmed and cut in thirds
  • 1 cup mushrooms, thinly sliced
  • 1/2 cup onions, chopped
  • 1/2 cup celery, thinly sliced
  • 2 cups cooked brown rice
  • 2 tablespoons light soy sauce

  • Directions

    In a large frying pan or wok, heat the oil over medium-high heat.

    Add asparagus, mushrooms, onions and celery. Cook, stirring for 5 minutes.

    Add the cooked brown rice (pre-cook according to package directions) and soy sauce. Cook stirring for 2 minutes longer. Remove from heat and serve immediately.

    For some added protein, mix in lean meat such as chicken or pork.
