Feasty Butter Rum Apple Chicken

Just in time for the holiday weekend, the Feasty Boys stopped by the "Good Morning America" studios to serve up some tasty recipes. As you fire up the grill we're sure you'll love this recipe for their scrumptious chicken.

Like many of the Feasty creations, this chicken is excellent served either as a sandwich or as an entrée with the appropriate accompanimens.

Ingredients
  • 4 Boneless Chicken Breasts
  • 1/2 cup apple butter
  • 1/4 cup Myer's Spiced Rum
  • 1 red delicious apple, cored
  • 3 tbsp. butter, melted
  • Brie cheese
  • Cinnamon
  • Four onion rolls
  • Green leaf/bibb lettuce

  • Directions

    In a small dish, mix together the apple butter and the rum. Using a meat injector, inject approximately 1 to 1 1/2 tablespoon of the apple butter/rum mixture into each chicken breast and set aside in refrigerator for 30 minutes.

    In the meantime, lay a 1-by-1-inch piece of aluminum foil on your counter. Core and slice apple into 1/4-inch slices leaving on the apple skin. Dip apple slices into melted butter, sprinkle with ground cinnamon and arrange on aluminum foil.

    Remove chicken from refrigerator and season liberally with salt and pepper. Preheat grill and transfer the aluminum foil with the apples to the grill. Place chicken seasoned side down on grill. Allow chicken breast to grill approximately 5 minutes per side.

    Once chicken is thoroughly cooked, top with sliced Brie and top with grilled cinnamon apples, allowing the cheese to begin melting. Remove from grill and allow chicken to cool for several minutes.

    Slather any remaining apple butter/rum mixture on split onion rolls and brown on grill. Place chicken breast on onion roll with green leaf/bibb lettuce as a garnish.
